Ham Leftovers – what are your favourite leftover recipes?

For dinner last night we had Meatloaf with peas, carrots, mashed potatoes and homemade cheese sauce. We ate all the Meatloaf but I purposely did too much of everything else so I could use it again. Tonight I’ll mix the cheese sauce into some boiled pasta with some leftover ham, and I’ll reheat all the vegetables.

Thanksgiving leftover pie. I take the leftovers and top it off with mashed potatoes and pop the whole thing in the oven to bake. Even better than the first time round
I just microwave it and have the same again.

I love leftover meatloaf. I use it to make a sandwich to take to work for my dinner. Or I will take some meatloaf in a plastic microwave safe dish with some vegetables to heat up in the microwave at work.
when i make meatballs and sausage, i always double the amount and freeze half. if i roast a chicken, i roast 2 and pull the meat off one and separate and freeze. I will make a quesedilla out of any meat cheese or veggie combo left in the fridge
I use meat in curries ,pies, sweet and sour,soups.The veg pretty much the same .Bubble and squeak.I like all veg reheated in cheese sauce.Boiled spuds roasted off with garlic and herbs.Like others I always cook too much and then have an easy day in the kitchen with the left overs.Yummy enjoy your evening meal.!
you could mix your mash veg and cheese sauce, put a small layer of chunteny, a layer of mash mix, and top with puff pastry

Bubble & squeak left over mash potatoes cabbage chopped mix together into a thick round shape.Then fryied until brown, serve with breakfast must have an egg.Bread Pudding stale bread made into a sweet with custard food of my childhood.Popa

With leftover meat, either I use it in sandwiches and definitely the turkey sandwiches on Christmas nighr are far better than the main meal, or I’ll use it in stirfrys with vegetable and either left over pasta, rice or some noodles.
With veg and particularly potatoes, I make little patties – mixing the veg, mashed potato, forming into little “burger” shapes and frying. Delicious!
Or the other classic I do with nearly all left overs is the Omlette or Fritatta – my real favourite is left over potato, mushroom and chicken, and sprinkled with a little cheese… Delicious!
I’ve even used the cooking water from a boiled ham joint and some dried peas to make pea & ham soup.
I don’t really have left-overs, just pre-cooked ingredients.
Some people are wary of left overs. I made too much Bolognese sauce once and served it up the next day. My second husband wouldn’t eat it. He said he didn’t eat left overs. The next time I made spaghetti Bolognese, I purposely made too much sauce. The next day, I made lasagne with the left over sauce. He ate it like a lamb to the slaughter.
I heard them once referred to as “planned overs” instead of leftovers. I like that name!.
I make extra crab cakes and have crab cake sandwiches another night.
I make extra taco meat (tacos one night, supreme nachos another night)
Extra chili for chili-stuffed baked potatoes
extra meatballs (some for spaghetti, the rest for meatball subs)
Extra grilled or roasted chicken gets shredded and made into chicken salad sandwiches or bbq chicken sandwiches.
Even my leftover homemade bread (which doesn’t stay fresh long) gets made into breadcrumbs, croutons, or french toast.
We embrace leftovers around here. My husband takes them to work for his lunch, and I often plan a leftover night into the weekly menu.
Use mashed potatoes for fishcakes, croquettes or those types of things.
If they have just been boiled, I love them sliced into 9mm thick pieces, and fried in butter, with a soft fried egg on to for breakfast.
Leftover Mince and Veggies can be nuked. I like a dishing out spoonful nuked, placed on toast with an egg on top for breakfast, or a couple of spoonfuls for lunch. (if not too runny in a sandwich, not a Sloppy Joe)
Leftover rice and veggies curried, wrapped in filo pastry and deep fried is a great finger food when you are sitting in front of the TV watching a game etc.
The leftover croquettes and curried rice rolls with chips (fries) are my favourite finger food when I don’t want to eat at the table with a knife and fork.
